Veggies, Black Beans and Rice

Rice and Beans give you a full amino acid profile. This recipe is very flexible. Feel free to use whatever veggies you’d like.

  • Cook rice according to package instructions
  • Saute veggies – mushrooms, spinach, onions, peppers, etc – season with salt and pepper
  • Drain canned black beans – medium heat and add cumin, salt, pepper – or whatever you desire
  • Divide on plate into 3 different areas
  • Top it off with a vegan sauce or lemon juice or cilantro or some guacamole – enjoy straight from the plate or throw it in a tortilla – don’t be afraid to experiment!
