Tofu Scramble

  • saute 1 tsp of virgin coconut oil with some mushrooms, onions, and spinach for several minutes until fragrant
  • squeeze some water from half a block of tofu and crumble it directly into pan
  • add a salt or garlic salt, black pepper, a light amount of turmeric, and about a Tbsp of nutritional yeast
  • stir consistently for several minutes until some water starts to cook off and get a bit dry
  • add a small amount of Just Egg and stir until texture is to desired consistency
  • serve with vegan butter on multigrain toast
