Raw Vegan Tofu Ceviche

  • 1 cucumber
  • 2 tomatoes
  • 1/2 red onion soaked for 15 minutes
  • 1 package of tofu
  • 1 large carrot grated
  • 2 bunches of cilantro
  • vegetable broth
  • V8 juice
  • salt
  • Lemon

Adjust lemon and juice according to your own preferences

Combine all ingredients and chill in the fridge
