Nash’s Vegan Chili
Nash’s Vegan Chili
This one certainly requires more work and preparation. But if you consider the meal prep aspect all you have to do is warm it up once it’s made. This will require a VERY large pot and several containers though.
VEGGIES AND BEANS
- 2 cans diced unsalted tomatoes
- 1 pepper of every color diced
- 1 diced onion
- 1 or 2 diced carrots
- 1 diced stalk of celery
- 1 can of black beans
- 1 can of pinto beans
- 1 can of kidney beans
SPICES TO TASTE
- lots of chili powder
- lots of cayenne pepper
- garlic powder
- onion powder
- cumin
- salt
- pepper
- tablespoon of sugar
- dash of hot sauce
Add veggies and beans – add spices – add water to adjust consistency.
Bring to boil – adjust seasoning to taste if necessary – reduce to simmer for a few hours. And that’s it.
I HIGHLY recommend Late July – Tigernut and Cassava grain free tortilla chips for dipping.
