10 Minute Vegan Stir-fry Pizza

This is yet another spontaneous meal I just threw together on a whim and it turned out to be absolutely perfect. This version is for a light small personal size pizza. If you’re hungry you’ll likely want 2 or more.

 

Stir Fry
  • Olive Oil
  • 1/4-1/2 cup of onions
  • 1/2 cup of bella mushrooms
  • 1 clove of chopped garlic
  • A whole “pan’s worth” of spinach
    • (my intent was to overload on the spinach)
  • A light dash or two of vegan Worcestershire sauce
  • Garlic Salt

Add oil, onions, mushrooms, and worcestershire sauce to pan on medium-high heat stirring frequently. Cook for 3-5 minutes until the onions just begin to soften. Add remaining ingredients, stir until spinach starts to wilt. Reduce heat to simmer and cover with lid for 5-10 minutes.

 

Tortilla / Crust
  • 1 tortilla wrap
  • Additional Olive Oil
  • Vegan Cheese of choice
  • Italian Seasoning

With tortilla on a plate, add stir fry to tortilla. Oil pan and slide the tortilla back onto the pan. Top with vegan cheese and italian seasoning then cover with lid. *Attempt* to melt the cheese without burning the tortilla (most vegan cheeses don’t melt as effectively as milk based cheese). Once the bottom of the tortilla is brown it’s done.

Obviously you can make a wide variety of adjustments to this recipe. Play around and adjust for your favorite topping, these are just mine. Once it’s cooked, you can eat it like a pizza or fold it like a taco or quesadilla.
